Okonomiyaki is most popular food at any festival in Japan.
That's right, You could see how Big is the line at Jeggs! Our product is Veg style Okonomiyaki so didn't have any meat in there.
Why was that so tasty??
This is the reason. Ken start prepare on Friday for the Dashi. This is the most important for the batter to make delicious Okonomiyaki.
The eggs are Free Range eggs. So it grew up very healthy. I could see how different is the colour of the york.
And the oganic cabbage and green onions where had been grew up in pemberton (Whistler's neighbourhood). We chopped by hand on Saturday till mid night. every week my friends come to help for chopping cabbages.
Prep for the batter mix with the good Dashi, leave it for over night in fridge.
Grated yam in the morning. Mix up at the market.
That's Why our product is yummy!
So much love in the Jeggs!!!
Good quality for sure!
And the sauce, more than 80% of okonomiyaki lover used the sauce in Japan. we used for Vegetarian.
Mayo makes mild I think good much with the vinegar of Mayo.
bonito flakes and green sea weed!!
mmm .... yummy!!!
How many weeks did you came back to us??
I saw many same face every week on the line!!
I was deeply moved by the flow.
Thank you my friends!!

that was fantastic things.
another things, we have many left over of cabbage. because of that.
We knew that raining all day but eh? you know,, I thought wether is changing all time.

Ok,
I'll make "cabbage croquettes" !!
Recipe : Chopped Cabbage
Steam and saute the cabbage with half cup of dashi. then drain it.
Saute chopped onion.
Make a Panko,
grind the dry breads to make enough for the croquettes.
Cabbage ball mix
now the steamed cabbage put in a big bowl, mix with Tofu(it need drain first), eggs, sea salt & pepper, brown rice flour, and sauteed onion,
maybe wet bread to hold together? what do you think?
pinch of nutmeg, green onion. Okonomiyaki sauce.
Mix them all till get together. maybe cheese is good too.
make a ball.
put flour to it all around the balls.
Beaten eggs, dump in it. then move the eggy flat balls into the Panko. needs good covered it.
then put on the oven tray.
it may be too difficult to hold it together. hahaha;;;;)
little olive oil on the ball to make it more tasty.
you can put in freezer as well!
350F oven bake those till Panko is nice brown colour.
try it and enjoy cooking**
good luck!!!

I always thinking something new.
We prep on Saturday night at local sushi restaurant when they closed.

The organic cabbage was delicious wasn't it everyone!!?
That was amazing!!
We always chopped hole things except out side leafs and core parts.
I was think about the core part of the cabbage. I like it actuary.
Have you think about that? It really sweet parts of cabbage.
Don't through it away, just keep it! and cook it!
I made the core pickles! because I don't wanna waste that beautiful cabbage.
Just you need ... Vinegar, Water, Sugar, Salt, Red Chili, Herb.(I used dill and bay leaf)
Put in a pot and heat it up. damp in the core parts just before boiling them. wait 2~3 min.
But do not boil. Take out those things to the jar(boil the jar first). and pour over the hot vinegar juice.
Close the lid asap.
That's it.
I haven't taste it tho. Hahaha
Probably you can eat next day.
Enjoy*
